(I know this is a little long but it'll make you laugh)
We had our company picnic today and they had a baking contest. My daughter who also works at the same company said weeks ago "Mom let's do it, let's bake something for the contest" I told her I didn't really want to be in the contest. Some days after that conversation one of my co-workers on the picnic committee said," Michelle you have to be in the contest nobody is signing up" I said OK I will join in. When I told my daughter we were going to bake for the contest, she was like "when I asked you the answer was no, now Jillian asks and you say yes? I told her nobody was joining and they only had five people so that's why I said I would be in the contest. Miss Piggy (my daughter's nickname from early childhood, she's 25 now) looked at me like I was crazy.
So Miss Piggy and I began looking for recipes, I said if we are doing it we are making this from scratch. The words slid out of my mouth so fast, I was like who said that? You see we are not baking people, especially not people who bake from scratch. From a box from time to time but never from scratch. So in our search she found a picture of cupcakes in sugar cones that looked like ice cream. I was like yes, that's what we are doing! We made these cupcakes before that looked like little pies and everyone thought they were awesome, so we had to top those.(yes those cupcakes were from a box cake mix)
We, here I go again trying to take the credit, it was my daughter who found a Banana cake recipe that did not look to difficult , so we thought we would try it. Now of course we had more than a week to try our hand at baking from scratch, we ended up trying the recipe the night before the contest. If this was a fail we would be using box cake mix because we had no other back-up recipe. Luckily for us they tasted great and the house smelled wonderful, we almost had a mishap because someone forgot to add the baking soda, I ain't mentioning any names but it was not yours truly.
I say all that to say this, our cupcakes tasted good and looked even better than they tasted! We were giving each other Hi-fives at 2 in the morning cause that's how long we were up decorating those dam cupcakes. The best part, here it comes. After searching and trying to concoct something to carry these cupcakes, I went to get something to drink and I used the plastic 16 oz cups that we buy because my kids are too lazy yo wash dishes. A Light bulb floated above my head at that moment! I looked at the clear plastic cups and said these are sturdy and I can cut a hole in the bottom, turn them upside down as a home for our cupcakes cones. Miss Piggy said Mom we can put labels on the cups, I was like great, now I'm going to bed until 3 in the morning!
THE DAY OF THE CONTEST. We had to transport these cupcakes to work and yes this is when the sh*t hit the fan. We thought they were secure in the cups we put in our pan, wrapped with aluminum foil and we were on our way. As soon as the car started to move so did they! We both had chocolate all over our shirts and jimmies all over the car. Needless to say we started out with 17 cupcakes and when we arrived at work we ended up with 11 salvageable cupcakes.
Lesson learned here? DO NOT make Sugar cone cupcakes unless they are for your own event at your home or decorate when you get to your destination not before! Oh yeah when we got there and people started bringing in the desserts I was like, dam it to hell there were like 20 other people who ended up in the contest so I really didn't have to join in. We came in
3rd and won a $50 Visa card. #betterhadwonsomethingforallthesh*twewentthrough!
What we call our "Banana Split Ice Cream Cup Cake"
(Tell me that doesn't look just like real ice cream!)
Gina's Banana Cupcake Ingredients Cupcakes:
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon fine salt
1 stick (4 ounces) butter, softened
1/2 cup granulated sugar
1/4 cup sour cream
1 1/2 teaspoons vanilla extract
2 large eggs
2 large ripe bananas, peeled and mashed
Directions For the cupcakes: Preheat the oven to 350 F. Line a 12-cup standard muffin tin with paper cupcake liners.
In a medium bowl, combine the flour, baking powder, baking soda and salt. Set aside.
In a large bowl, add the butter and granulated sugar. Beat with a handheld mixer until combined. Add the sour cream and vanilla. Slowly beat in the eggs, one at a time. Incorporate the dry mixture and wet mixture together until thoroughly combined. Add the bananas and 1/2 cup walnuts, being careful not to over-mix.
Using an ice cream scoop fill each cupcake liner three-quarters of the way full. Bake in the oven until the tops turn golden brown and a toothpick inserted in the middle of the cupcake comes out clean, 18 to 20 minutes. Remove the cupcakes from the oven to a wire rack and let cool before frosting.
All dressed up and ready for show!

Funny story and you guys did an awesome job because they do look exactly like a real ice cream cone!.
